So, the next edition of our #5DadsGoWild camping trip is only two weeks away. And I’m a little terrified. The usual reasons still apply. Bears might attack and/or eat us. I could freeze to death or my tent might collapse under the snow. And then I’ve also got to think about preparing at least one of the camping meals for me and my fellow dad bloggers. Yes, my #KwansCreativeCatering skills might have slightly improved over the years. But, they’re still largely contingent on having modern kitchen facilities and access to modern conveniences. I won’t have that in the middle of the woods. So, what should I make?

One of my first thoughts was to make chilaquiles verde. It could be a relatively simple thing with tortilla chips and melted cheese. This recipe from Isabel Eats seems easy enough to follow. Since at least a couple campers don’t like tomatoes, going with the verde variant could a smart move. I may or may not make do without the Mexican crema. Adding in a fried egg could make for a heartier meal though.

Following along a similar line of though, foil packet campfire nachos are perhaps even more versatile and customizable. You can pretty much put whatever you want in them. Better still, you can even prepare the little foil packets ahead of time. That way, they’re even easier to heat and serve at the campsite. Happy Money Saver has a straightforward recipe to follow. I’d just have to make sure I use enough aluminum foil to prevent the packets from falling apart or scorching.

For a meal that’s a little more contained, chorizo and potato burritos like this recipe from Love Food could be a great option. Normally, I’d expect rice in my burritos, but that’s not necessarily the case. With a potato-based filling, it’d be almost a samosa or pierogi, but not at all like those either. The chorizo would add a nice kick of flavor too. Or I could do it fajita style with bell peppers and onions instead.

Though I probably wouldn’t bother with the mason jars, I like this pre-made pasta salad from Finding Zest. The layered mason jars do make for a good aesthetic, I have to admit. Either way, the variety of colors and acidity will add brightness to a midday meal. I might have to do without cherry tomatoes, but that’s okay. Another option is to follow a similar idea, but to bring some basic bouillon, add boiling water, and make a simple pasta noodle soup. Maybe with some chunky ham or smoky bacon?

Another comfort food approach could be to make grilled ham and cheese sandwiches. Tastes Better from Scratch suggests a simple homemade honey mustard spread on the inside. That sounds like a good idea for a bit of tang. I might have to ask A Dad in the Burbs to bake up a loaf of his sourdough for us. This would be easy enough to do on a simple skillet. A medium cheddar feels like it’d be the default option, or maybe a pepper jack to shake things up?
